Nordic Delight was started with NORA funding. The purpose, according to its product description, was to “utilise and combine natural benefits in connection with our primary production involving food culture and gastronomy as a way to create products for the tourism industry and, at the same time, create new opportunities for food producers to expand their workforces”.
Geographically, the project covered the areas of the historic Finnish settlements in Sweden and Norway and Swedish settlements in Finland. Also included were the Faroe Islands and Iceland. Despite the differences between these areas, there are many shared traits in terms of natural resources, culture and traditions.
Continuation of the project
The project was completed in 2008 but work on the concept has continued, and it has since been renamed Food as Travel Mementos. One of those involved is Johanna Maria, from the Faroese village of Húsar. She makes products for travellers using rhubarb, hvann (angelica) and other herbs for sale to people who visit Húsar and the island of Kalsoy, where it is located.
